Actually, I used chicken instead and added some celery seed for added flavor. I used boneless, skinless chicken thighs and roasted them with only salt, pepper, and olive oil then continued with the recipe.

It turned out very well! I used only leeks, onions, garlic and mushrooms for the veggies. I sauteed them first then added it to the roux.

I actually haven't had it for maybe 25 years or so. But loved it growing up. The dumplings were so light and airy! I added chive and parsley to them. I'm on my way to the store to get a few things for Sunday Sauce/Gravy. YUM!!!
