We've made the decision to use only olive oil from countries/states other than Italy because of the criminal influence over the olive oil industry there and so some of the oils do cost more.

GREAT day for cooking and baking since I'll be snowed in...almost 1.5 feet already from the snow drifts.

Just put a pot of ham and bean soup on the stove. I'll probably make some pretzel bites, a nice pre-made salad and bought a rack of St. Louis ribs...just for snacking on later. Now, to think of something sweet to make...

Now you guys are talking... good bean soups and or heavy vegetable soup... good Cuban Black bean soup, Onion and potato  celery soups.
All those fancy dishes are not to healthy!
When we get over 50 and I'm way over that, we need to cut out junk and eat smart!

Some the Flavors, once you get use to not eating them, you will not miss them. and I always love to cook, but now if I can not make it 20 to 30 mins, it's not for me and fresh and light stir fried in Olive or Vegetable Oil, in  ceramic pans, low temp!

There are so many ways to make White meat, to taste good, its unbelievable and colorful looking.

Eat right and stay fit!
sadly, my condition will not get better, but got to take care of what's left :)

Actually, many soups are very healthy. It depends on what you put in them and your health/dietary requirements. ;)

Soups that are mostly veggies are very good for you. Unless you can't eat a lot of starches then you should limit or cut out the beans and potatoes and maybe heavy cream for creamy soups. If you can eat beans but not heavy cream then use the beans and cook them until they are very soft and smash them against the sides of the pot. This will help thicken the soup/stew. ;)

The pretzel bites are just done and very good! I made the ribs last night for a late night snack.  :hah!:

I may make some flat breads for pizza later. I can freeze them and use them whenever I want.  :thumbup:

I made an awesome sandwich today using the Quick & Easy Flatbread recipe.

To begin, Lealer's cousin passed away last week. So, I made a few extra quick breads (8 of them) with some fixings for her to take to her mom's house since her family usually gathers there for such things. I made cooked crumbled bacon, diced pepperoni, sliced red peppers, and sliced onions. She made a lasagna with ground beef and ground sausage but had some of the meat mixture left over. They only made a few of the flatbread/pizzas since the lasagna was better than Lealer's usual and the rest came back home. Now we had a lot of flatbread/pizza fixings leftover!  :thumbup:

I started to make a traditional pizza with the leftover but then found this Roasted Garlic Black Pepper Aioli recipe (please scroll down about half way for the recipe) while surfing the net for something else. Then I had an idea!  :2cool!!

I stir-fried the red peppers and onions then added the cook meat along with the crumpled bacon and diced pepperoni. I added a splash of worchestershire, a sprinkle of ground garlic powder, some salt and pepper. Meanwhile I cooked some drunken portabella mushrooms in white wine until they were nicely browned per my Drunken Mushrooms and Onions recipe.  :azn:

Time to assemble. After warming the flatbread, I spread some of the aioli on it then layered the meat mixture on top. I squirted some ketchup on it then added seeded and chopped tomatoes and reasoned them with salt, pepper, and basil. Shredded lettuce went on top of than along with another warmed flatbread. I cut it into quarters and offered Lealer a slice and she loved it!!!

I've GOT to make this more often!!!  :eat:

Tina saw Brandon making French Toast but wanted bagels. So, I suggested that she use the bagels instead of regular bread to make french toast! It came out well. Pic to follow after she eats and sends it to me. LOL

Growing up "in the hood", we learned to make it with whatever bread you had on hand. We used to make pizzas that way too...including making them with English muffins. LOL
