I like it. Dark themes are not my first choice, but I like the crisp, clean lines.

A Combination Pizza
« on: October 24, 2021, 10:01:11 AM »
I've found two good looking recipes. One is a "Wild Mushroom Pizza With Caramelized Onions, Fontina, and Rosemary":

https://www.epicurious.com/recipes/food/views/wild-mushroom-pizza-with-caramelized-onions-fontina-and-rosemary-230633

The other is a "Pasta With Mushrooms and Prosciutto":

https://www.epicurious.com/recipes/food/views/pasta-with-mushrooms-and-prosciutto

Both look really good but I've been in the mood of some type of pizza. So... I had the idea of making one with wild mushrooms (shiitake and crimini) simmered in white wine, partially caramelized shallots, crispy prosciutto, roasted garlic, and...a mornay sauce! So far, I've made the drunken shrooms, roasted garlic, and the caramelized shallots. I'll need to crisp the chopped prosciutto and make the mornay. To put it together. I've bought some good small flat breads and a package of some nice prebaked pizza crusts that are rectangular in shape. I was thinking of spreading some roasted garlic on first then some of the mornay sauce. Then top with some gruyere, the shrooms, shallots, and prosciutto then bake.

What do you think? I'll make this later today or tomorrow.
