Title: Champagne-Poached Pears with Dark Chocolate Sabayon & Pistachio Brittle

I have always wanted to make poached pears. Most recipes are poached in red wine although I have seen a few using white wine. But champagne would work nicely! I'm not into nuts so I'd probably leave them out. LOL

The funny thing is that I bought 2 bottles of champagne for New Years and didn't drink a drop! One is still in the fridge.  :hah!: This is a lot easier to make than the Cassolet so Kay just might make these for you. ;)

That looks great to me, but Kay sez, "No effing way will I be making those, you can ask Steve to make them for you!" Sooo... me sez, "OK"!  :2funny:
