Me wuz doing a bit of thrashing around and came upon this recipe... sounds like a dish for you to try Steve.  :thumbup:

It would be..."if" I liked ricotta. LOL I don't like store-bought ricotta, mostly, because the texture cause it's gritty. However, they do say the freshly homemade is much better. So, one day either I'll make my own or find a place that makes it fresh and try it.

Personally, I don't even use it in my lasagna. I prefer the Northern Italian version where they use bechamel which is smooth and creamy and you can mix cheeses to your liking in it. It is much more smooth, creamy, and cheesey if you are using the right kind of cheeses.

Southern Italian immigrants that settled here from Rome, Venice, etc. are the reason why most people only know about ricotta based versions. ;)
