Title: Poached Chicken

I've been making and eating a lot more salads lately. It also encourages me to use the new OXO Salad Spinner (https://www.ourfamilyforum.org/FamilyForum/index.php?topic=4708.0) I bought recently. doing so will also save me money. I tend to buy premade salads from the store several times per week and they can be healthier for you, providing you add healthy ingredients.  :rofl2

So, I've been roasting chicken thighs and then dicing or slicing them to put on the salads. However, I just saw this poached chicken recipe and am going to try it right now:

Sadly, my Dr said I need to cut back on pasta.  >:( I tend to make a lot pf pasta salads, antipasto salad and ravioli with a cheese sauce. This is also why I've decided to make more regular salads.

I've taken a slightly different approach to the poached chicken. Since I'm using a little white wine, dried herbs and spices, I added them to the pan and then add the cold water and am letting it sit for awhile to dissolve the spices and hydrate the dried herbs. This should boost the flavor quite a bit, I hope. LOL

I forgot to mention that I let the chicken sit in the cold pot for awhile to sort or marinate it before poaching. It should add to the flavor.
