That looks like a wonderful dish! 

Kay cooks dishes like that from time to time and while we've never had it with Andouille sausage she has used many others, like, Kielbasa, Polish, Italian and others that I surely don't remember at this moment. She also has used different kinds of beans, not only the reds, but also pintos northern whites and a couple of times she had tried the bean mixes, like three bean and fifteen bean(16?) mixes.

Oh! And for breakfast this AM I had pork Chorizo and egg scramble with 6" flour tortillas!

I've made rice and beans with various meats and beans too. Makes for a nice change from time to time.

Ha! I've bought something similar but was frozen.I think Taco Bell has something like that too.
