Grandma’s Collard Greens

This is pretty much how I make mine! But, I use apple cider vinegar for white wine vinegar instead of white wine...and not as much as listed for the wine. I'll also cook my hocks until the water evaporates and it leaves a film of brown fond on the bottom of the pot which is a trick I mistakenly stumbled upon one day while not paying attention to the pot that really amps up the flavor! Then I'll deglaze the pot with water or chicken stock and continue with the rest of the recipe. I also don't use red pepper flakes...can't eat the stuff.

We have always loved greens of any kind including collard greens, but Kay can't eat them any more. We would have the cornbread with them and some times pinto beans as well.  :eat:

I've had them with beans but someone else made it. Maybe one day I'll add them. Sometimes I'll use smoked turkey wings instead of the hocks or smoked shanks. I actually prefer the shanks...less greasy than hocks.
