Roasted Corn with Basil-Shallot Vinaigrette
A simple combination - roasted corn with a basil vinaigrette - has a fresh flavor that is pure summer.

"I have made this quite a few times and it's always wonderful. I find that the clean up is easier if you line your pan with aluminum foil. I also use frozen corn... but sometimes my salad gets a little gummy... and that might be because...4 servings, about 1/2 cup each

Ingredients * 3 cups fresh corn kernels
* 2 tablespoons extra-virgin olive oil
* 1/4 cup chopped fresh basil
* 1 tablespoon minced shallot
* 1 tablespoon red-wine vinegar
* 1/4 teaspoon salt
* Freshly ground pepper, to taste
Preparation 1. Preheat oven to 450?F. Toss corn and oil to coat and spread out on a large baking sheet. Bake, stirring once, until some kernels begin to brown, about 20 minutes. Combine basil, shallot, vinegar, salt and pepper in a medium bowl. Add the corn; toss to coat. Serve warm or cold.
