How to Make Perfect Hard Boiled Eggs

I wanted to boil a few eggs to place in the fridge so they would be handy for a breakfast snack. ... or any other time for that matter.
So, being tired of my usual hit or miss approach to boiling my eggs I sought guidance from Google and came up with the following way to get the job done, it works great.  :thumbup:

1. Cover the eggs in a saucepan with water: Fill a saucepan about a quarter of the way with cold water. Place the eggs in a single layer at the bottom of the saucepan. Add more water so that the eggs are covered by at least an inch or two of water.

The more eggs that are crowding the pan the more water you should have over the eggs. 6 eggs should be covered by at least an inch, 7 to 12 eggs, 2 inches.
2. Heat the pot on high heat and bring the water to a full rolling boil.

Adding a teaspoon of vinegar to the water may help keep egg whites from running out if an egg does crack while cooking. Also some people find adding 1/2 teaspoon of salt to the water helps prevent cracking as well as making the eggs easier to peel.

3. Turn off the heat, keep the pan on the hot burner, cover, and let sit for 10-12 minutes.

For me, I basically do the same but rarely cover them after they boil. I really don't see a difference in this as long as you let them sit on the stove for the required sitting time...10-15 mins, depending on how hard or soft you want them. Then pour the water out of the pan leaving the eggs in it. Jostle the pan around so you crack the eggs all over against the sides of the pan but not so hard to split them down the middle. LOL

Then add cold water to the pot and let sit for a minute then peel the eggs under running cold water. The shells usually tend to fall right off in one piece. No vinegar or salt required but also have never tried it. I also suggest peeling starting at the bottom/fat end. It seems to make it easier to me.

Sometimes you may notice an air space at the bottom of your cooked eggs. To help prevent that, store your eggs on their sides. It helps to center the yolk. Yes, it's a scientifically proven fact. ;)

If you've seen the Alton Brown page for steamed eggs he does the same...storing the eggs on their sides.
