Thanksgiving 2011 Topic

OK, what are you making? How are you making it? Are you going out for dinner? Any traditions? Have you even started cooking yet?  :bigteeth:

Me? At this very moment, I'm making a turkey stock for the gravy and cooking collard greens. I'll freeze the greens until Turkey Day. For the stock, I may or may not make it into a gravy before the big day. I'll be prepping all of the veggies a day or 2 before.

The Menu

Herb Stuffed Turkey - not stuffed with stuffing. It is stuffed with buttered herbs in the cavity and under the skin.

Cider Gravy with Homemade Turkey Stock

Cornbread Stuffing with Sausage and Leeks

Collards seasoned with Smoked Neck Bones

Corn with Roasted Peppers and Onions

Sweet Potatoes with Oranges and Peach Schnapps

Mac and Cheese with 4 Cheeses

Not sure of the bread or desserts yet...  :innocent:

My tradition?

I usually prep the veggies a day or 2 before and brine the turkey the day before. I'll buy a case of beer and something hard to drink. I'll sleep all day Wednesday and get up about 10pm or so and start cooking...and drinking. LOL

Come about 4-5am I'll be ready to sleep while the turkey is roasting. Then Mrs. Skhilled takes over and watches the turkey...I think that's what she's doing.  :think: I set a timer to wake me up, just in case. LOL After the turkey is done I'll make the gravy with the pan drippings from the turkey.

After that I'll get a little to eat, a little to drink then time for a nap. Wash, rinse, repeat throughout the day.  :hah:
