 I’ll take my eggs in just about any way, shape, or form, but a fried egg has long been my favorite. Fried eggs are almost foolproof to make and can turn just about anything into a hearty meal, from a pile of sautéed greens to avocado toast.

While there are a number of ways to fry an egg, from sunny-side up to over easy, one method in particular might be the very best way to go about it. It’s called a Spanish fried egg, and it’s something you should get to know ASAP.

What Is a Spanish Fried Egg?

Spanish fried eggs, called huevos fritos, are as decadent as fried eggs come. Instead of using just a little bit of olive oil or butter, they’re fried in a very generous amount of olive oil — and they’re basted in the oil while they cook. The result is a fried egg with seriously crispy, lacy edges and a just-set yolk that practically melts in your mouth.

I never liked sunny-side up eggs like that...only scrambled or hard boiled. But the technique is very interesting. I would've never thought to do that to an egg that way.

Back in my working days there was this one guy who liked to cook us breakfast occasionally and his routine was to first cook the bacon in a large pan. He would use the thick sliced, sugar cured type of bacon and would cook it until it was well done,so that it would render lots of oil. Then he would cook the eggs in that bacon fat and would use a big spoon to scoop the hot oil and continuously pour it over the eggs.

It was an excellent way to clog up the ole arteries, but we didn't care because it were good and we loved it.  :thumbup:

I always save my bacon fat and cook other things with it. You can store it in the fridge and it should keep well for at least a month. I always do the same when I get some duck. Duck fat rocks!

Been using chicken on occasion as it gives food a slight chicken skin taste. LOL The Jewish call it schmaltz and have been using it for ages!
