Not used to seeing a grill plate like this closed and with the little holes in it...interesting.

The latest thing now is cooking steaks from frozen. A lot of magazines and sites are showing how to do this now. Been meaning to post something about this and your vid reminded me of it:

I used to tenderize with a fork but marinade with worcestersire sauce. :)

Can't do salt brined like that anymore. :( I do use dry brines sometimes but nothing like that due to my HBP.
