Molasses is an 'unrefined' version of cane syrup... the cane is crushed/squeezed to extract the juice which is then cooked and that turns it into a dark, thick syrup that is called molasses.

Molasses might be just an American thing. But if you can get your hands on some, Les, try the Molasses cookie recipe from my site.

LOL, I assume that you'd use less than you'd use for molasses. Dark molasses can have a kind of burnt taste as well. More so than the light version.
