This looks good! I do make my brussels similar, sort of. I brown mine and then braised then in apple cider which mellows the bitterness. And I've never used those herbs with brussels nor added apples before. Gotta give this a shot next time I make them. :)

In all of our years together, Kay has only cooked Brussels sprouts a couple of times because we just could never get into them. I can remember that they were served up regularly when I was in the Navy.  laughing7

They are bitter so you have to tame the bitterness. I do it with a apple cider braise. I braise them until tender and the liquid has just about evaporated into a nice thick sauce. :)
