This sounds VERY, VERY good but extremely pricey!!! What is it? It's a savory seafood jam! It contains:

1.  Dried shrimp - if you can find them, very expensive. If you make it yourself, very time consuming.

2.  Dried scallops - if you can find them, very expensive. If you make it yourself, very time consuming.

3.  Jinhua ham - Only found in some areas of China and cannot be legally imported. Costs up to $100/lb.!!!

This is not to mention all of the other ingredients as well as the time it takes to make it! You can buy jarred XO sauce in Chinese food markets or online, but a small, eight-ounce jar can easily run you $30 or more. But they claim most are overly sweet and vary from brand to brand.

Unless you've got a few extra hundred dollars lying around and a lot of extra time on your hands you'll probably want to not do this. LOL But I bet it is VERY tasty. I'd love to try that ham!
