Ham & Potato Soup with bacon

This soup is much faster and easier to make than a traditional one but it does taste pretty good although it does not have any smoked meat in it!

I did make a few adjustments. I made a bouquet garni of the thyme sprigs along with a bay leaf. After cooking the onions, carrot, celery, and garlic I added a little white wine and reduced it until it was almost evaporated and then continued with the recipe. I also added a dash of apple cider vinegar for just the slightest bit of tang.

They left out the part about removing the thyme sprigs in the instructions. LOL

It was surprisingly good since I didn't add any smoked meats to it and I'm a HUGE fan of it. The recipe just looked pretty good on its own. So, I thought I'd try it.

We didn't do this as a soup, but came close with Scalloped Potatoes and Kay has those in the oven now!  :heart:
