Title: KAF Cinnamon Bread

I made this yesterday and it turned out great! The texture and crumb was spot on! We (the family and I) did think it could use a bit more cinnamon flavor. But I think that is more of a personal taste than a flaw in the recipe. As you can see from the images the spiral has no gaps at all! You can add nuts, raisins, etc. as well as other flavors. And as other bakers have suggested, you can make toast, French Toast, etc. with it for even more fun!

You can freeze it after you bake it or after it rises then continue with the baking...your choice. ;)

When it finished baking it had a very nice domed shape to it but after it cooled it sank a bit. They say this is because I let it rise too long...which I did.

I'm going to make another loaf today but adding more cinnamon and possibly brown sugar instead of white sugar for the filling. might even make cinnamon rolls out of these. All you have to do is cut them into maybe 6-12 and then sit them on the cut side and add a bit of glaze or something when they are finished. ;)

OMG!!!!!!!!!!!!!!!!!!!

I made it again! This time, the filling was 1/2 cup packed brown sugar and 2 tablespoons of cinnamon along with the 2 teaspoons of flour. It tastes like a cinnamon roll in loaf form!!! I was going to make a glaze or that cider cinnamon spread for it but it doesn't need it at all!

Next time I'll try them as cinnamon rolls with the glaze.

That SAF Instant Yeast is really awesome!
