My GF found this in Food Network Magazine and made them. They are very moist and DELICIOUS! It makes 3 mini loaves but, trust me, you'll want to double the batch and freeze the rest...if they last that long! :drool:

Ingredients:
2 apples
1 1/4 cups flour
3/4 cup sugar
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup dried cranberries
2 eggs
1/2 cup vegetable oil
1/2 cup sour cream
1 teaspoon vanilla
Directions:
Set oven to 350 degrees F. Butter 3 mini loaf pans (about 6 by 3 inches each).
Shred the apples (about 1 cup); squeeze dry. Whisk the flour, sugar, baking powder, salt, baking soda, cinnamon and nutmeg in a large bowl; add 1 cup dried cranberries.
In another bowl, whisk the eggs, vegetable oil, sour cream, and vanilla; stir in the shredded apples.
Fold the wet ingredients into the dry ingredients until just combined, then divide the batter among the 3 buttered mini loaf pans.
Bake until a toothpick inserted into the centers comes out clean, 35 to 40 minutes. Let cool on a rack.
