Butternut Squash Lasagne w/ Goat Cheese
« on: January 23, 2012, 10:24:44 AM »
I usually do not post recipes that I have not made myself yet but I just got this in an email and all I could say was, OMG! I love lasagna (and most Italian foods, LOL) and I love butternut squash cause it tastes like sweet potatoes. What could be better, imo?

I've never made lasagna pasta from scratch yet but I think I'll try for the first time just for this recipe. :)

I might take an extra day or 2 off next month when my vacation time renews and try to make the noodles by hand. I do have a hand pasta roller and am considering getting the attachment for my Kitchen Aid mixer.

The key is thin pasta. Store-bought it too thick. Thinner pasta lets more of the other flavors shine through.
