I can't eat the pepper jack cheese or the red flakes. I can only tolerate a pinch, if that or it'll make my tummy upset and burn all the way through. LOL

I can't remember trying avocado but it is on my to-do list...

Because avocado adds to your potassium levels, Kay has had to cut back. Before she was eating it just about every day and now only every other day of less. I have it maybe once a week.

Today, I'm making homemade cream of mushroom soup. I've loved the canned stuff since I was a kid! But this is te first time I'm making it fresh!

I've done my homework and read about a few dozen recipes. But most don't add dried mushrooms...they use fresh only. I've been getting into the dried ones lately because although they take longer to process they taste better and when you steep them they make a flavorful broth! The broth is is mostly what I'm counting on for this to work. ;)

The recipe contains:

fresh button mushrooms
dried shiitake mushrooms - reconstituted
chicken broth
fresh mushroom broth - mostly from the steeped/reconstituted shiitake mushrooms
a bouquet garni composing of thyme sprigs, bay leaves, and whole crushed garlic
chopped onions
white wine - most recipes use dry sherry but I didn't have any and saw a few recipes that used this instead and liked it better
salt and pepper to taste
a dallop of sour cream to finish it

I'll saute the mushrooms until they release their liquid and mostly reduce it then add onions and garlic and saute until slightly softened. Then add the broth and mushroom broth and simmer for about an hour and puree it after removing the bouquet garni.

Then add the cream, chopped shiitake (for texture and taste) and simmer and season to taste. Then add a dallop of sour cream and lightly stir it in just before serving. Well... That's the plan.  ;D I hope it turns out ok.  :laugh:

Atm, making duck fat seasoned fries.  :banana:

I made a seared duck breast yesterday with a mango mustard sauce that I created. But I saved the fat from the duck. Normally, most people bake frozen french fries. I like to saute them over med-high heat in fat. Today I'm using the duck fat. Bacon fat works equally well!  8)

The mushroom soup is good! I used this recipe as a base to get me started but then added my own twists to it:

I've been a fan of Chef John for many years and visit his foodwishes.com site for longer than I can remember. LOL

I did use dried shiitake that was reconstituted and chopped. I added them at the end so it can have some shroom bits in it. I also added a little shredded parm cheese and left out the shroom broth. It tasted weak to me. Maybe next time I'll use it instead of adding water as it does add a little extra flavor.

I'l have to experiment with different types of mushrooms, fresh and dried, next time.

Pressure cooker ribs...takes 20 minutes to cook and about 15 for the natural release and dinner is served! :)

Oh... And did a riff in the Classic Potato Gratin that I love so much! But, instead thyme,garlic and gruyere...I used rosemary, leeks and provolone. I've also added my trademark tablespoon of dijon mustard for a little kick as I do with mac and cheese or most dishes using a bechamel type of sauce. ;)

It is. I've learned it making a mac and cheese recipe from Finecooking.com...I think, a number of years ago and have been doing it ever since then.
