Easy Peach Cobbler

I thought I added this recipe here but I guess not... Since I'm gonna make it again today here it is!

Here's an easy to make recipe that tastes awesome!!!  :eat:

Serves: 2
Cooking Time: About 35 minutes
Total Time: About 45-50 minutes
You just need to be careful to not burn the sauce in the first step like I did the first time I made it!  :oops!

Ingredients:

Filling:
3 tablespoons packed brown sugar
1 tablespoon unsalted butter
1/8 teaspoon salt
1/8 teaspoon cinnamon
1 pound fresh peaches, peeled and pitted
1 tablespoon water
1 1/2 teaspoons lemon juice, bottled is fine...
1 teaspoon all-purpose flour
1/2 teaspoon vanilla extract

Biscuits:
1/2 cup all-purpose flour
2 tablespoons sugar plus one teaspoon sugar
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1/4 cup buttermilk
2 tablespoons unsalted butter, melted

Directions:

1.  For the filling: Preheat oven to 400 with a rack placed in the middle.

2.  In an 8-inch oven-safe skillet, add brown sugar, butter, salt, and cinnamon over medium-high heat and cook until brown sugar dissolves, about 2 minutes.

3.  Add peaches. Cover and cook until they release their juices, about 5 minutes. Meanwhile, whisk flour, water, and lemon juice in a small bowl and stir into peaches.

4.  Remove from heat and stir in vanilla then cover and set aside.

5.  For the biscuits: Whisk, flour, 2 tablespoons sugar, baking powder, baking soda, and salt in a medium bowl.

6.  Add butter and buttermilk and stir until dough forms.

7.  Using a spoon, drop 1-inch pieces of the dough evenly over the peaches then sprinkle with 1 teaspoon of sugar on top of the dough mixture.

8.  Put skillet into the oven and bake until top is golden brown, about 20-25 minutes.

9.  Let cool on a wire rack, about 20 minutes then serve!

Enjoy!!!

Tips:

1.  If you do not have buttermilk on had you can easily make it by adding 1 teaspoon of lemon juice to 1/4 cup of milk. Stir and let sit for 10-15 minutes then continue with step 5 of the recipe.

2. You may substitute frozen peaches for fresh but do not thaw them! Add them frozen and increase their cooking time to 7 minutes instead of 5

I can't make or eat stuff like this any longer .. to sick ...I loved to Cook! and was real good at it also!
