Kay is making Swiss steak over rice and her recipe is a little tangy and spicy and is somewhat beyond the palette of many, but is just right for me.    :eat:

We eat a lot of rice and beans, real rice done the Puerto Rican way. and veggies on the side. a little white meat, not fired .. one or twice w week and all the Family loves that I use to cook stir fried stuff, but can no longer had standing up, the total body pain is unreal, and on Oxygen to Boot.. sorry for bad typing and stuff, too shaky these days!

We use various been s and ad some pumpkin to the beans or cooked potatoes, virgin Coca Nut oil, Spanish, or fresh Latin condiments.. no re-fried beans, they look like there been eaten before!

BTW forgot... I use to love swish steak, even use slimmer steak, for pepper steak sandwiches :)

I like to put in the beans, some cocktail sausages, and at time some coking ham, low sodium.
or even shrimp, there are so many way to make the so you feed the complete family!

Yesterday, I made pork chops with a mango-mustard sauce and roasted cauliflower with parmesan cheese!

The mango-mustard sauce was my own creation and is very easy. Buy 2 small cans of Goya Mango Nectar and pour it into the same pan you sauteed the chops in...after pouring out most of the oil that was left in the pan. DO NOT clean the pan. The following measurements are approximate...

Add about a tablespoon of each: worchestershire sauce and honey. Add 2 teaspoons of lemon juice and red wine vinegar. Salt and pepper to taste. Sprinkle some onion powder and garlic powder.

After it reduces about half add about a tablespoon of dijon mustard. Continue cooking until you get a good thick consistency. Add more salt and pepper, if needed.

You can adjust the ingredients to your liking. This should go well with chicken and maybe even fish!

You could also add fresh sliced onions and chopped garlic....maybe I'll try that next time.  :eat:

Lealer is on a low-carb diet...another diet. :P

Since she is now diabetic she needs to eat low carb. She just started the Atkins diet which means she can't have flour or breads and starches...well just a little won't hurt. I like making sauces most of them use flour or cornstarch. But how do you make a gravy without regular flour?

Thanks for that link Steve... me is on a diet now.

Gotta do some serious lifestyle/food changes because my weight is approaching 285 and I'm showing all the expected results in my labs because of the weight.  :oops!
Just came from my Dr yesterday and she has me on a very strict regimen and Kay dose the cooking, so my hopes for success are good. My goal is 30lbs loss for my next visit in 90 days, but overall I need to lose at least 50lbs over the next 6 months.

My recent diet and lifestyle has been, "If it don't move then I eat it!"  :eat:

My new 'diet' is several basic changes to that lifestyle... cutting portions in half or more (less portions), no more sugary snacks, no more white stuff (salt, sugar, white bread... ect). Then amp up the fruit and veggie intake and lower the meat intake, with fish and chicken being the main meats and beef removed almost entirely.

And exercise, no more half-assed weak attempts at daily exercise, I now have to do a two a day sessions of serious efforts of at least 30 minutes that include power walking and weights. I've already started all of the above and it's difficult on the food part, not so difficult on the exercise.

I hear ya on the food part. Had to revise my eating habits too. But I still sneak in one or 2 things here and there.  :whistle1:

There are plenty of fruit and veggie recipes available although the fruits can have quite a but of sugar.  :(
